Nashville Chef Explains What the Difference Is Between White, Milk, and Dark Chocolate

Sink your teeth into the best chocolate your body and mind could ask for. But, wait, what is the best, and where can I find it? And what about white chocolate? Is it really chocolate? Become a chocolate expert and read on to find out the difference between different chocolate types.
Did you know that white chocolate is not really chocolate? It is mainly cocoa butter, with the addition of sugar, milk solids and vanilla. It doesn’t contain any cocoa liquor (bitter chocolate) or cocoa solids. In many cases along with the cocoa butter it will also contain other vegetable fats along with milk solids, and other ingredients. In order to be labeled White Chocolate, it must contain 20% cocoa butter to satisfy the FDA. Your white chocolate should have a yellow hue. That is the true color of cocoa butter.
If you are looking for a chocolate “fix” you will not be satisfied with White chocolate, you will, however, satisfy your sweet tooth.
Milk chocolate on the other hand does contain cocoa liquor along with sugar, milk solids and vanilla. High quality Milk Chocolate will be a little lighter than most Americans are accustomed. One trick some manufacturers use, is to over roast the cocoa beans allowing them to add more sugar, which inturn allows the beans to go farther. Don’t get me wrong, this is still a tasty product and part of our heritage, however from a purist standpoint, you are consuming a higher concentration of sugar. You will notice a kind of scratchiness in the back of your throat from these products. Come to Paul’s Chocolate Gallery for the good stuff.
Dopamine spikes when indulging in chocolate. The higher the percentage of chocolate in a product is the more your brain gets what it really craves. A nice perk of eating dark chocolate is that it has a fraction of the calories compared to milk chocolate. Just 1 to 2 pieces of good quality dark chocolate a day will suffice. If you are one who does not like dark chocolate, try a piece of 70%-75% Swiss or Belgian Chocolate, you will be pleasantly surprised. Doctors and Dietitians recommend a 70% or higher for the best health benefits.
Dark Chocolate has many of the same flavor characteristics as red wine. Such as, fruity, smoky, anise (black licorice) or nutty. The Cocoa Beans characteristics are unique to their environment just like wine.
Where is the best source for importing chocolate? Though the cocoa growers are located in countries near the equator, such as, Venezuela, Ivory Coast and Mexico, to name just a few. The best chocolate is produced in countries such as Belgium, Switzerland, Italy and Canada. - Franklin Art Crawl-Support your local community and swing by the monthly art crawl. The event is open to anybody and occurs the first Friday of every month from 6 to 9 pm. Plus, it is for FREE. Paul from Paul's Chocolate Gallery will have samples of his artistic chocolates to pair with local wine. This has been a tradition for Paul the past one and half years, and he loves it. Here are some Chocolate Fun Facts.
1. Cocoa beans are white when freshly harvested and taste nothing like the chocolate you are familiar with. They turn brown and dry out after fermenting in the sun under a blanket of tropical leaves.
2. Cocoa Trees are tropical they grown only in the equator regions. The best beans are said to come from Venezuela.
3. The Aztecs were the first to use cocoa. It was served as a beverage. Fernando Cortes has been given credit for bringing it to Spain, although scholars have argued that Christopher Columbus brought it to Queen Isabella 30 years prior, but she did not think it was anything significant. Cortes before bringing it to Spain sweetened his cocoa with sugar that was not widely available in Europe at the time, this made the chocolate much more pleasing.
4. The Spaniards kept the secret of cocoa for nearly 100 years before it spread to France.
5. Milk chocolate was invented after the invention of milk powder or “baby formula”. It was invented by Daniel Peter a chocolate manufacturer in Switzerland, who later merged his company with Nestle’. That is why Nestle’ is often credited with the invention of Milk Chocolate.

Who was St Valentine?
The most popular legend about Valentine's Day’s origin is that Emperor Claudius II didn't want Roman men to marry during wartime. Bishop Valentine went against his wishes and performed secret weddings amongst other defiance’s. For this, Valentine was jailed and executed. While in jail he healed the daughter of his jailer. The night before his execution, he wrote a farewell letter to the jailor's daughter signing it "from your Valentine". He was buried on February 14.

Paul has been making stunning desserts and chocolate works of art for over 25 years. He brings technical expertise and art to chocolate the world has not seen before. He's a gold medalist many times over by American Culinary Federation. His works have been noted by top food journalists and featured in Bon Appetit and Conde Nast Traveler magazines.His training consists of culinary school and apprenticing under world-renowned and pastry champion Master Pastry Chef Gilles Renusson. And in the art center of the world Paris, France, under world-known Master Pastry Chef and author Joel Bellouet. His career carried him across 4 star and 5 star country clubs, restaurants and hotels throughout Michigan and Maryland. The last twelve years he served as Executive Pastry Chef at the Renaissance Hotel in Nashville. He looks forward to his next venture as business owner and continues his journey as chocolate artist.
Believe it or not, Paul's first tools were a bulldozer and blowtorch. Growing up in a family owned demolition business with five brothers and four sisters, his future seemed to be laid out for him. He kept his work boots and traded in his big demolition machinery for tools to create.

SAY "HELLO" TO THE WORLD'S FIRST CHOCOLATE CORK
The "Chocolate Corks" were inspired one evening drinking wine with friends, eating dark chocolate and discussing how wine corks have been reinvented into works of art and home decor. As a creator of chocolate art, I thought to myself, it would be cool to have a chocolate wine pairing in the shape of a wine cork
I went to work looking into the characteristics of red wines and found "chocolate notes" or "undertones" of chocolate in its description. I took my cues from these wines and began work on creating the perfect wine pairing. The "Chocolate Cork" is made with cabernet sauvignon, dark chocolate and infused with red berry flavors such as cherry and red raspberry. The final wine pairing accent to this wonderful treat is powdered raspberry that gives resemblance of a red wine stained cork.
